Gatsby is a great fave of mine, not to mention Jane Eyre, which was the first 'adult' book I ever read, when I was twelve, and it had a pretty powerful impact. Little Womeis gorgeous too, I'd like to revisit that. If you like Fiesta, have you read The Garden of Eden? That's my favourite Hemingway.
